That Miyoko's oat milk cheddar cheese is my favorite vegan cheese! I have a cashew allergy so my vegan cheese options are already limited. I use this one all the time in my baked Mac and cheese and queso dips. It is so worth the price (for a vegan cheese, that is).

Looooove broccoli cheddar soup! I'll have to try it with more garlic like you did. FYI for anyone, I don't always have coconut milk on hand, so I usually use a mixture of equal parts soy milk (plain unsweetened from Trader Joe's) and plain unsweetened almond milk. As always, an excellent video, Erin! 😃

Made this two weeks ago. It lasted one day. I let one of My non vegan girlfriends try it. She can really cook. She was talking about how good it was. Better than Subway. My 12 yr old grandson loved it too. About to make again tomorrow.
