I remember reading about French baguette sandwiches in a book as a child, but it was butter and thinly sliced baby red radishes and sea salt. It really stuck with me, and when I finally had the proper bread, I made it. It was definitely very good, but I went on to make the classic ham and butter. Divine. But within a few years, I became a vegetarian, and now I treat myself to vegetarian pâté and cornishons . It’s really satisfying and there are plenty of good quality readymade vegan and vegetarian pâtés available these days.

American here. On a trip to France when I was younger, I had the BEST sandwich ever. It was very simple. Baguette, butter, and ham. The crust of the baguette sliced the roof of my mouth a little, but I didn't care! It was amazing.

Before I ever tried one, I thought a butter ham sandwich was just so basic and couldn't be terribly exciting...until I had one in Paris and was in heaven. I eat so many of these when I'm done there. Don't know if its the wonderful quality of the ham (not like the tasteless horror people are used to in other countries), the amazing taste of that pure butter, and that crunchy delightful baguette. The combo is just pure perfection.

@@cyrilhudak4568 About that, it's also a lot more complicated then wanting the French to stay away after WWII.... it wasn't the whole of Vietnam that wanted the French and then the United States to leave.... people forget Vietnam was a Civil War, between the Communist backed North and Western backed South, not Vietnam VS France or the US. It was Viet vs Viet, it was Southerners that fought with the French and then the US and her allies against the North and theirs and Southerners that held the line until the West for all intents and purposes, abandoned us.

Equal parts ground pork and veal. Diced shallot and garlic. Add panade of milk and bread if desired. The example he used did not contain panade. Add cognac or Madeira. Make a tiny hambuger and fry it to test seasoning. You generally adjust the salt and pepper like this. Add some peppercorn and whole nibs of pistachio if you want. Place mix in bread mold and cover with foil. Bake in a bain marie . tray with water is ok. Try 350 for 1 hr and start to check. Test by poking with knife. If clear juice runs out its done. Place a brick on top to compress it slightly as it cools. Chill it. The juice in the mold will gel up. Warm the mold on the stove top to loosen the gel and flip onto a plate. Serve with cornichon pickles. We also lined the mold with bacon slices for flavor. Then add the pate mix and bacon on top before covering with foil. We also placed duck livers down the center as filling. I worked as pastry chef in a French cafe and the pate was one of the extra duties I had. In order to prevent it being dry it needs some fat. You can use sweet italian sausage for the pork. Process or grind it with the veal. Avoid ground beef as it will make it rubbery like cheap meatballs.

Another sandwich variation would be thinly sliced radishes on buttered baguette bread. A friend of mine, who is from France, says this sandwich is popular picnic fare. I have tried this combination, and find it quite tasty. The sweetness of the butter, and the mild bite of the radishes work well together.

28 years ago I been in Paris, hungry, I went to a store and ask for a sandwich, I choose the pate one, I am not exaggerating that it was one of the best and most delicious sandwiches I have ate on my life, I tried unsuccessfully to find that kind of pate here in the USA, I only remember the guy who prepare the sandwich told me something like "grille" but I think I did not catch what he said. I think is the country style pate that you are referring in this video. Thank you.

"Rillettes", maybe? That's meat, often pork (probably so in this case), cooked 'confit' style - looooooong, slow cooking in fat (its own, if it's pork), then shredded and mixed back in with the seasoned cooking fat, and then potted and cooled. Fabulous, and indeed, a form of pate.

It's not just the crunch, it's the lightness of the bread (just look at those bubbles!), and the flavour. Very wet dough, slow proving, which means the baker has to be up very early the day before it's sold, and it's gone stale by the evening. The supermarkets here in the UK boast of French Baguettes 'Made with French flour'. Makes no difference, if it's not cooked right; it's horrible. One French guy, near me, knows how to do it, works like a dog, great bread. He's not allowed to do it in France, he says, because he hasn't got the right certificates! They are so strict!

The Baguette needs to be eaten very fresh, a French bakery use to cook Baguette 2 to 4 times the same day to supply fresh baguette all day long. Depends the weather dry or wet it have a great influence of the baguette quality when you buy it, also on the way to bake it ( more or less time ) - so, there is a simple trick, as it can be difficult to get the freshly done baguette then, buy a soft one, not over cooked ( too much brown ) but gold color, at home heat up your oven to 200 / 240* celsius then touch the baguette with water all sides all surfaces and then in the oven for 5 to 8 minutes > it comes fresh and crispy again : ) Believe my experience I'm living a very wet and hot weather country where baguettes does not survives fresh and crispy long time.

Think there's more to it than that. Béchamel or Mornay sauce is used and I believe different cheeses are used in different parts of France. Also curious what the traditional bread is and would like to see his take on a classic French pub sandwich. Prost!!!

I think keeping the sandwiches simple helps keep the flavor pure and you can appreciate every detail. If you want some cheeses, bring some along on a picnic (with some wine of course!) This way you can also appreciate the pure flavor of the cheeses on their own as well. But at the end of the day its your sandwich, put cheese on it if you want to :)

The main feature of the sandwich is not the unsalted butter everybody is ranting about. If u can't taste anyway u don't need any unsalted butter just put some butter product and hamlike product on a breadlike product, and triple the portion size.

The French Cooking Academy I didn't know it was so simple, I've seen american recipes for le gouter, most of them grill the bread until the chocolate melts. I also tried the French yoghurt cake, many recipes for that. mine came out dense like cornbread, lol! Perhaps you can do a video on afternoon snacks. Thnx!

I'm surprised that no Moutarde de Dijon was used, esp. in the sandwich with the paté. I would think the French would do that occasionally. The Croque Monsieur is also a very good sandwich, but heated ,of course.
