For some reason, the hardest for me has been the 'its not cheating to work on your renders outside the 3D software'. Strange mental block that I think wastes a lot of time, but I'm starting to finally push past it

The reason you make every aspect of the 3D art in the 3D software is because it shows what you can actually do in 3D. Adding touches in Photoshop afterwards is lying.

Nup, in the real world no employer wants you messing about in 3D software if you can do what you need in half the time in compositing or editing. For one, colour correction is a step often overlooked by beginner artists because people think what comes out of the rendering engine must be the final image. Sure, if you're making a portfolio piece about hard surface 3D modelling and you Photoshop in all the details, then that IS lying. But there are lots of times when adding final touches in Photoshop is required. Think adding people in architectural rendering, doing sky replacements or even using different rendering passes to separate features in your scene.
