Even with Mozart, one conductor's way is not the same as another. Bruno Walter's version of the "Haffner" Symphony is obviously different from that of John Eliot Gardiner, for example.

I would think keeping time, eg. adagio or scherzo was the most vital thing as this reflects the mood.

A question: do conductors sometimes conduct the beats on the upstroke? I've seen what appears to be that and it would seem to make sense in some situations especially for site line to the baton. Is it possible that the tip of the baton might not be visible to all of the musicians on the down stroke?

We know to some extent what a composer intended. You can't play Mozart in the same way as you would play R. Strauss.
