I make a version of this sandwich I call Pogachoni, which is an acronym for Potato, Garlic, cheese, and onion which are the main ingredients in the sandwich. It has a mayonnaise sauce with onion and garlic powder mixed in. I use the same method to make the bread, but I cut it differently to make pocket bread. Instead of cutting it in half horizontaly, I just cut it vertically in half and then break open each half into a pocket. The secret to the best flavor is to roast potato slices and onions inside the wood oven so they have a char flavor, and then stuff all the ingredients into the pocket bread. It tastes amazing and the potato is the star of this sandwich. Try it. Pogachoni

We have the same name as this sandwich but the dough has oil mixed in. We put cheese in the middle and fold it snack size and leave to rise before putting eggwash on top and baking... amazing how we use the same name!

A sandwich originated in Newark, NJ, years ago is on a bread called pizza bread. Never a recipe published but it’s 9” round with a hole in the center, used for Italian Style Hot Dogs. We think it’s made with pizza dough.

Hi jupe367 , sorry to let you down but this is not our staple food , it’s more an Italian food manipolate to please the international taste . Nothing wrong with it but you got the wrong conclusion. anyway I just want to say that any dressing including mayonnaise and ketchup you cannot call Italian , we use extra virgin olive oil instead. ( very far from the processed food you mostly use) And the most important thing it’s not what you eat but the way you live and the relationship you have with food , as an explanation I would say that many people in Italy coltivate in their backyards theirs own vegs. it looked like some kind of homemade tomato sauce, might have herbs in it, unlike thick overly sweetened supermarket stuff full of preservatives and food dye. His English not so good maybe he just calls it ketchup to differentiate it from tomato sauce used on pasta etc. I can't imagine a dude from south Italy offering heinz ketchup

Depends how he's making the dough as regards how healhy it is....if it's just plain white flour there are no health benefits to eating that..would need to be using some spelt or whoelmeal too, but he doesn't show how he's making the bread...the oil aren't healthy either full of saturated fats...but they sure look tasty..a lot healthier than most sandwiches ...at least there's no butter.

T4C Saturated fats are unfairly demonized. So called "saturated fats" have healthier omega 3 to 6 ratios, while mystery veggie oils are high in omega 6s, toxic heavy metals, aluminum, etc. Butter is much better for you than crisco, especially if grass fed. Also, fat in general is what helps you control your hunger/makes you full. If you take away fat from your diet the only way to make it taste "good" again to many people is to add sugar, which causes many problems in itself. Also, where did he use any butter/lard/coconut oil? I only saw olive oil used. As for flour, plain flour from fresh baked bread is loads healthier for you than anything bought in store. This is healthy food. Plain flour is fine- bleached highly processed flour isn't so good but it doesn't have to be "whole wheat" to be healthy. I can freshly grind flour in my blender and sift it, and sure it will have less fiber but that's fine. It's fruit juice that is unhealthy, because so much fiber is removed and the sugar isn't dealt with properly. In bread the sugar is consumed by the yeast, and in general it has far less sugar than fruit. Actual healthy food is so controversial these days.... "Eat this low calorie dog food mash we've prepared for you that has plastic in it! It's healthy because it's low fat and has no eggs in it, only replacement soy lecthin!" is seen as fine, while "fry your eggs in a little bit of the fat left over from frying your meat, rather than using crisco" is seen as "unhealthy".

Mohammed Anwer. I'm italian and I swear to you this isn't absolutly an italian dish. Nobody makes this in Italy. The bread is italian but the rest of the ingredients aren't used. This bread is also named "pane arabo" in north Italy and in Salento there is also other form of "pucce" not only the one you saw in the video.
