The reaction from Marcus when Carmy says "for real" about his dish is so real. I've worked in restaurants most of my life and getting validation from the head chef of a really nice place is something. I still remember one day messing around and making a dressing. Having chef ask for the recipe was such a compliment. There's a reason we go to work when most people would stay home sick. We love what we do, and love to help put out good food. We're also kind of nuts and almost universally enjoy one mind altering substance or another.

Yeah jewish lightning is also something that was established in season 1 if you recall when someone broke through the wall past a poster. Ritchie explained it was jewish lightning attempt by Micheal so its a nice little callback.

I know every episode is like this, but the fire suppression test is my favorite in this sense: this show really feels like working at a restaurant. You have this massive, insurmountable problem, that's gonna absolutely obliterate you... then you deal with it, and you remember there's another ten million insurmountable problems that need your attention. It's what service feels like, you got a cargo ship's worth of bullshit to deal with and you're fighting for your life, but it's only 30 minutes of service. And when you get through it you're so relieved, then you remember there's still everything else to deal with.

yeahhh but richie doesn't have like an intrinsic eye for detail suddenly, like it wasn't always there - i think it's more realistic (and more interesting) that everything he spots and every standard he sets is intentional, he's always looking for this stuff on purpose and trying hard to learn about how to provide a good service.

I don't think Michael turned off the system so that if it burned down it would be good for an insurance claim, he turned it off so he could directly cause a fire. Normally if you have a fire from a gas burner in a restaurant, the gas leak will be detected and automatically shut off. By bypassing the system, Michael could easily burn down the restaurant and have it be traced back to the burners.

I helped open up the restaurant I'm currently at now. The stress of waiting on certifications to arrive, and being stuck in a limbo in some ways was so stressful, not to mention the first few months. We had community Tums for BOH and FOH to help with the indigestion that came with the stress lmao we went through so many containers the first year.

There is a few call back to previous episodes in this one that I think very neat, like the whole "____ Lightning" about fire suppression test that was hinted in Episode 1. Also how Carmy seem to be the type to have to know the definition of something to decide whether it is or not, in this Episode he was talking about "what is a girlfriend", and in Episode 3, he was asking about "what is fun" in the opening monologue. Moreover, in the same Episode 3 is when he's talking about "the other shoe" that Claire pointed out in this Episode. In that same episode 3, Carmy was talking about how he think maybe he need to provide amusement for himself so he can better provide amusement for other people, but then we see in this episode, he actually still doing the opposite, he only started calling Claire his girlfriend when everything about the restaurant seem to be "solved" that he doesn't need to care about anymore.

Maybe it's just from growing up in NY which has a big Jewish population, but I never thought Jewish Lightening was offensive. It refers specifically to insurance fraud for a business via fire. (hence lightening) I had an old mafioso Italian boss back in college who may or may not have had his mechanics shop set on fire so he could move to a better location.
