My husband and I both agreed that this BBQ Chicken sliders were the best we have ever had! The flavors were so good and blended so well together! This recipe is a must try! So easy and so delicious! I hope your family loves it as much as mine did!
Ingredients (Caramelized onions)
1 red onion diced
2 tbsp butter unsalted
2 tbsp brown sugar
3 tbsp balsamic vinegar
1 teaspoon soy sauce
Ingredients (Sliders)
1 package of kings Hawaiian Rolls (Regular size -12)
1 plain or BBQ rotisserie chicken (meat pulled from bones)
1 red onion caramelized
9 slices of pepper jack cheese (or cheese of choice)
1/2 cup to 1 cup of your favorite BBQ Sauce
2 tsp onion powder
2 tsp garlic powder
3 tbsp butter melted
Parmesan cheese
Ingredients (slaw-optional)
**If I made this again I would modify the recipe. The original recipe calls for the following (I will put my modifications to the side)
1 cup of shredded red cabbage
1 cup of shredded carrots
1/2 cup mayo (I would start with a 1/4 mayo and adjust from there)
1/4 cup mustard (I would use 1/8 cup mustard and adjust from there)
2 tsp apple cider vinegar (I would use 1 tsp and adjust from there)
1/2 lemon (I would use 1 tbsp and adjust from there)
1/2 tsp cayenne
Salt & pepper to taste
Instructions:
Melt butter over medium low heat. Add onion. Sauté for 2-3 mins then add in your brown sugar, vinegar and soy sauce. Stir well to combine. Turn heat up to medium and continue to cook until onions are golden brown and soft. About 10 mins. You will want to stir occasionally
Remove onions from skillet and add in your chicken. Add in your onion and garlic powder as well as your BBQ Sauce. Stir well to combine. Let it cook on medium heat for about 2 mins. Stirring occasionally
Pre-heat oven to 350 degrees F. Assembly your sliders. Start by slicing your rolls in half and then place the bottom layer in a baking dish. Baste a light coating of melted butter over bottom layer. Top with your chicken then your onions and cheese if you are using it. Add your top layer of rolls and baste with remaining butter. Sprinkle parmesan cheese over the butter. Cover with foil and place in the over for 20 mins. Remove foil and continue to cook for another 5-10 mins or until your tops are golden brown and your cheese is melted.
While your rolls are in the over make your slaw if using. To make the slaw add all of the ingredients to a bowl and toss well to combine. Season with salt & pepper to taste.
Remove sliders from oven and cut into individual rolls. Remove top roll and add slaw if you are using slaw. Enjoy!
