As he cooks and adds ingredients, they are listed at the bottom of the screen. The font is smallish, but he does list them. For the actual amount of things per serving, you just have to count the items as he cooks. He also lists the spices at the bottom, and by eyeballing it, I would guess he probably uses 1-2 tablespoons of each spice per recipe. I hope this is helpful.
