Ingredients:
1 small head cauliflower (1 Ib.5 oz.)
1/2 cup chickpea flour
1 tsp ground coriander
1 tsp ground turmeric
pinch of cayenne pepper
1 egg, lightly beaten
1 egg yolk, extra
vegetable oil, for deep-frying
Instructions
1. Cut the cauliflower into bite-size florets. Sift the flour and spices into a bowl, then stir in 1/2 teaspoon salt.
2. Lightly whisk the beaten egg, egg yolk, and 1/4 cup water in a bowl. Make a well in the center of the dry ingredients and pour in the egg mixture, whisking until smooth. Let stand for 30 minutes.
3.Fill a deep saucepan one-third full of oil and heat to 350F. Dip the florets into the batter, allowing the excess to drain into the bowl.
4. Deep-fry in batches for 3-4 minutes per batch or until puffed and browned. Drain, sprinkle with salt and extra cayenne, if desired, and serve hot.
