For years Chef Barry Finbar Bartholomew has been tantalizing us with his exclusive whatsapp posts previewing his new menu of the week. From items like Jerk Pelau , Fish & Chips to Curried Cow Heel & Pickled Caraili Chef Barry's Menu is a worldwide fusion of his knowledge as an international chef over the years.
We finally got a chance to visit a while back to taste this new menu ,try some of his sauces and chat a bit about his new film Panazz from his time as a member of the Trinidad All Stars Steel Orchestra . We were truly honored to be welcomed by the Bartholomew family ,we thoroughly enjoyed the wealth of knowledge that was shared with us .

I appreciate the creativity but for me that is way too much going on that dish . Its hard to judge this type of food with so many flavours. I wonder how good he can make authentic classic dishes that are not fusion or trini food. Then I would be able to judge how good a chef he is. With this type of food it is just subjective.

First person/chef in trini iever heard say that curry is not curry without CURRY LEAVES !!!!! I rather them over chadon beni anyday, no Indian food is the same without them !!!
