Edit: I have said "1/4 cup of chickpea flour" twice in the video, it was an editing mistake, you add 1/4 chickpea flour only once, and the wet mixture you add little by little :)

Hello. The following is NOT directed at our wonderful and beautiful content provider, but rather just a general statement and 'grouse' about the food industry in general. I LOVE this lady and what she provides. There is just something about me that very much dislikes folks saying things that are not FACT, but just their opinion. Such as "This is so much healthier because there is NO GLUTEN in it". Not true. It just means that less than 1% of the folks don't need to worry about Gluten. Some facts: there is NOTHING WRONG, nor is it in any way unhealthy, for folks to eat food containing GLUTEN. LESS THAN 1% of the world's population has a health 'issue' eating gluten. You don't hear any of the on-line folks that are showing how to cook being either alarmist or lauding the positiveness of say - "IT'S SHELLFISH FREE!" 23% of the people can be killed by that. Or - "HEY! This dish is SO HEALTHY for you because there is NO FISH!" 14% are allergic to fish." Hmm... how about the wonderful peanut? Oh wait_ about 12% can be killed eating peanuts. But, why don't we hear food folks saying "... AND IT HAS NO PEANUTS, SO IT IS THAT MUCH MORE HEALTHY FOR YOU - RIGHT?" Nope, not really. So, okay. What about milk. Milk MUST be okay, right? Well, NOT for 3% - kills just as fast as some others, but mostly just bloating, gas, etc. Everybody, PLEASE stop making such a huge deal out of this GLUTEN FREE crud. There is NOTHING unhealthy about Gluten, unless you are one of the less than 1% who have a negative health condition regarding it. Mankind has been eating bread for WAY over 10,000 years, and the 'modern' bread we bake today was eaten as far back as 7,000 years ago. Despite what y'all might think, I truly LOVE this channel, and I have made several of the yummy dishes. I could care less about the TYPE of foods used. I am ALL ABOUT TASTE!!!✨🤗✨ I will always LOVE my meat & potatoes, and toasted bagels with strawberry cream cheese. But hey, a ton of what is shown hear is just plain-out DELICIOUS. This gal KNOWS what she is doing, and we should all give her dishes a try. Now, I KNOW there are those who will take the opportunity to respond with negativity, and wonder why I would use THIS CHANNEL to sort of spout off. Again, I just think it is SO WRONG to say something that makes a viewer think a thought that is not true. The PRIMARY thought regarding NO GLUTEN, because of all the not true information out there, is that somehow gluten free equals HEALTHY, and it is just NOT true. Okay, now I will go and change my KZbin setting to not receive comments regarding this post. I don't like nasty and mean people. lol

I have been vegan only a couple months. Have tried repeated seitan recipes and they end up in the trash. This one though...... this is amazing!!! I can not thank you enough!!! Just wondering, since I can't have any soy, and miso is soy, is there a substitute. I really want to try this recipe, you make them ALL look sooo delicious. I was forced, for health reasons, into veganism. Not unhappy, because I love animals, but so distressed at not being able to eat so many of my fav foods and dishes. Jana - because of our homeopathic doctors, my mother bought a stainless steel waterless cookware set in 1948 when I was only 3. Cuz of never eating stuff prepared in aluminum, I'm very sensitive to the flavor that aluminum imparts into food. I would love to make these deli slices, but is there a way to wrap the seitan log for the first step in something other than aluminum foil ???

Hi Britta! I think I kinda missed that, you're right. However the broth is a combo of your favorite flavors, it might or might not include miso, that's actually your preference. But I always like to add a heaping spoon of miso, to be honest... ;)

Hi Jana. Thanks again for yet another perfectly explained and demonstrated recipe. I'm not sure though how much of the wet ingredients to use. In the video it just shows you using just dome of it. I'm not sure if this means I should add just enough to make it wet or if you added the while lot just bit by bit. I'd be very thankful if you have time to answer.

Hi Julie, I meant add little by little as opposed to add it all, its best to add rather than try to remove the liquid from the seitan, which is impossible. But I have used it all, yes. :)

You may replace the foil with bamboo or grape leaves. Tie with kitchen twine. Avoid foil and plastic wrap contacting food especially in heat.
