I made a Gingerbread 'Tiramisu' with cinnamon cream, Spekulatius crumble and Elisen. I will do it for the christmas dinner, too.

@@cooking-the-world I dont know, I ate it in a restaurant and the waiter told me these 3 ingredients. So I tried my own version and my family loved it. I used 3/4 Elisen and 1/4 of Spekulatius. (Both bought in the store). I 'crumbled' it in the food processor, but fairly rough. The whipped cream I flavoured with cinnamon and vanilla. And than simply layered it.

My wife makes a Lebkuchen cookie from an old family recipe that came over from Germany over 100 years ago. The dough is stored for 2 weeks then baked and stored for another 2 weeks with an apple. They are a thin hard cookie which makes them perfect for dunking in coffee, They are my favorite cookie.

The best lebkuchen I ever had was from a market stall in Regensburg several years ago. It was the oblaten type, but chunkier. A nice change from the more finely-grained Nurnburger type.

'Nabend Marta, I used to love Lebeskuchen when I was a kid but not now sadly. I have three tasks dictated to me,by my family for Christmas. 1. Saure Sülze, I couldn't get a pigs head or even pigs cheeks so I'm making it with belly pork. 2. Fleisch Salat, that's easy, I have the Mortadella and the rest of the ingredients, just lots of chopping. 3. Herring salad, again easy, I have the Rollmops and Gherkins but I need to get the beetroot and find some fresh dill. I'm looking forward to Donnerstäg when I'll be busy all day. Frohe Weihnachten Marta, Mattias und baby.

I've only ever had the Lebkuchen from Aldi that my German relatives eat. Even these are quite nice. I like the light texture, fluffy and coated in a white glaze, but still too sweet. There are so many in this video and they all look so much better.

I am making cookies with my 87 year old and 90 year old Aunts. So far we have made Snickerdoodles, Butter, Chocolate Chip, Anise, Mexican Wedding, Oreo Mice, and Coconut Cookies. They used to make up to 15 different kinds, but have not made any for many years now, so I thought it was time to renew the tradition. Now we need to find someone to eat them!

@@cooking-the-world Anise cookies are commonly served at Italian weddings. In Germany they are called Anisplatzschin. Mexican Wedding cookies have many names (my Mom called them Snowballs) but they are called Vanillekipferl in Germany. Oreo Mice are more for show - you take the top off an oreo cookie, using the cookie with cream topping as the base, and make a 'mouse' using a maraschino cherry with a stem dunked in chocolate for the body, a Hersheys Kiss for the head and sliced almonds for the ears (the chocolate holds the pieces together).

@@cooking-the-world I should have said the Snickerdoodle is an American cookie, I believe. I always use the Betty Crocker recipes out of an old cookbook my mom gave me. But the recipes are on their website. My mom and I use a mix of pecans and walnuts in the tea cakes.

I have traced my family surname back to 1642 and Morschbach, WNW of the intersection of 61 north and 50 west and Part of the Rhineland-Palatinate. It would be interesting to me to see what their traditional foods are. Could you see if it is possible to present food from that area? Thank you.
