I got one for you Nikki: it’s a Mexican dish, something I had in the fifth grade and haven’t had it since. Mix vegetables, especially corn and then ground beef all mixed together with cornbread mixture on top and then bake. I forgot the name of it but it’s really good, you’ll love this recipe. One thing I loooove doing with my mashed potatoes is I will roughly chop like half an onion and a couple pieces of garlic and boil it with the potatoes. They mash like everything else but give it a lil somethin somethin!

Growing up, this is how my grandmother would make mashed potatoes. She still does it today, & I do it that way too. I have tried it in my big KitchenAid Mixer one time, it did good but I did it a little too quick with the paddle, I should’ve switched to my whisk to finish it off.

I love making homemade mashed potatoes..my son's particular, so I usually do it the old fashioned way..butter,milk,salt and pepper..but I've also done it loaded..sour cream, cheese,bacon bits,butter and just a little milk😊..our weather's the same here in North Carolina..that spring weather
