Hi there and thank you for the vid. Roughly what temperature was your oil during the frying? Also, I love the gadget that you used - like a hand held mandolin. Good advice about slippery plantains, too: hold then in a tee towel. Do the ripe plantains crisp up as well as the less ripe ones? Finally the salt-water, brine solution is a revelation - I would never have thought of that.
