I've always read that you should only use the light part, but cooking up the darker part of the leek, it softens into a nice texture and has a good flavor! I recommend trying it next time you cook it for yourself! :) Great video as always Laura!

I swear my sister made a very similar soup the other day, it was leek-based and she used cauliflower as well and it was AMAZING. Can't wait to try this version! Looks warm and comforting

The crispy cauliflower and garlic really gave this soup something extra! Instead of parsley, I added dill. Could definitely recommend, it was delicious!

I made something very similar last night with sweet potatoes instead of potatoes, and without cauliflower. I also grated in a bit of nutmeg that enhanced the flavour. I'll definitely try your recipe, which looks phenomenal.

I usually clean my leeks by cutting them, putting them in a colander and wash/rinse them under running water, works fine and is quite fast.

Actually if you finely chop the dark greens of leeks it gives a a different texture as a different flavor. Lots of nutrients too.

I cooked it the other day and it was soooo goood! I left it a litle chunky so I had some pieces, the perfect texture for me! Also I didn't have any cauliflower left to garnish, so I just browned some panko with butter and some herbs and sprinkled it on top! It was such a nice combination of the creamy soup and the crunchy panko and some parm on top! Such a feel good Soup
