That food truck looks like the bomb !!!! Those birria tacos and the elotes in particular. -And I say that with living in Phoenix and having worked at a Mexican food restaurant through college. Actually, we're headed to Cancun this Saturday; and I can only hope the food is as good as the food from that food truck. At least from a visual; that's spot on how you make it ! Ah, couple last thoughts..... The burrito looked great as well. You know; about the only thing I'd gig them on is the cheese on the nachos. Looked like the cheap stuff; but hey, they're in a food truck. They don't have the capability to throw a ceramic plate under the 525-Farenheit broiler to melt the real cheese. Fair enough.
