Hi there! I'm a new subscriber. Just found your channel last night. Actually I sub to NO EGG CRAIG and also THE VEGAN ZOMBIE and they got together last night and did a live you tube video where they went to the various new vegan channels that didn't have a huge following to try and check them out or critique them a little to help those creators to gain more subs. And your channel was one of the ones they checked out. I didn't even hear what they were saying after they'd picked one of your videos to check out and I liked what I saw and went to open another tab on my laptop so I could subscribe to your channel. I've been vegan now almost a year. Not really counting the months anymore, it's just a lifestyle that "fits" me like a glove, feels like I always should have been vegan, ya know? Hard to explain. Anyhow I really like your down to earth no nonsense way of doing things. Your kitchen is beautiful and so efficient too. I have been trying to veganize some recipes with some funky results, lol. Am kinda busy right now, but am looking forward to getting more into your other videos in the next few days. Rock on, this is gonna be fun!

Welcome! I'm glad you found my channel. I try to make recipes that remind me of the foods I love. The cookies are amazing. I really do recommend making them a bit in advance. They need to hang out for a bit after coming out of the oven. They're delicious hot, but they are better once the coconut oil in them has cooled to room temp. Let me know how they turn out!

Great video! Have you tried making these with any butter alternatives versus oil? I am curious if Miyoko Butter would work well in this recipe.

Thank you. I have only tried it with coconut oil. I'm sure Miyoko's would be great. I just often use straight refined coconut oil instead of vegan butter because it's pretty much the same thing, in terms of the physical structure. You may need to adjust the salt a bit as well, since Miyoko's is already salted. Let me know how it turns out!

I tried these vegan cookies, and they tasted amazing. I also didn’t know that sugar can be vegan or that there was refined and unrefined coconut oil. I put a little more chocolate chips.

Thanks for taking the time to comment, and I 'm so glad you liked the cookies! A lot of commercial white sugars are processed through "bone char" to get out impurities. I know at places like Sprouts, their white sugars actually say "vegan" on the label. You can do a quick Google to see which brands do or don't still use that method of processing. In terms of coconut oil, there are a few different types. Virgin means that it's the purest form, and it will have a coconut flavor. Refined means that it's been processed and "refined" so that it's just the oil, without much, if any, coconut flavor. There are even liquid ultra-refined ones that don't get solid at room temperature. Most days, I have both virgin and refined on hand for different purposes. If you had to buy just one, and you plan on using it in a variety of ways, go with refined to be safe.

Use no-salt peanut butter instead of coconut oil, flax meal instead of aquafaba, yeast instead of baking soda (bitter!) and homemade date paste instead of refined sugar.

The colors are a bit off in the video. The first think I added was brown sugar, which is just sugar with a lot of molasses in it. The other ingredient that appears redish is the vanilla extract. The secret to chocolate chip cookies is how long you cook them. They should just be browned slightly and then you take them out. Then let them sit on the tray for a few minutes to set before you remove them. 👌🏼

I love your channel. All of your recipes I’ve tried have been great! Until this one... and I’m sure it’s ME and not YOU! But can you help? My cookies melted all over the cookie sheet and were a thin layer across it just a few minutes in. Here’s what I did differently than you. I used unrefined coconut oil (but I heard you say this was ok). I used almond flour instead of all purpose. I lightly sprayed canola oil on the cookie sheet to prevent burning. Any ideas? I’m definitely going to give these another try because I’m positive it’s my error somewhere.

I think it was the flour. Almond flour and AP flour are totally different beasts. You can't always just do a 1 to 1 swap with almond flour; it doesn't act the same as AP. Also, depending on how liquid your oil was, you might want to pop the cookies in the fridge for about 20 to 30 minutes before baking them. But my money is on the almond flour. You should be good with AP, or maybe even a 1 to 1 gluten free flour mix. If you want to try almond again, I would reduce the oil by half. The texture won't be the same, but I think you'll still get decent cookies.

I think keeping it at room temperature mimics room temp butter. It melts, but having a bit of body helps the texture of the dough a bit.
