Hi Guys!!
Today, we have an amaaazing recipe for Vegan Fettuccine Alfredo Pasta. This vegan fettucine is to die for (without anyone actually having to). This recipe tastes exactly like any regular fettuccine alfredo you’ve had. Seriously! We’ve made this many times with cashews instead, but this is surprisingly even better. We don’t know how, but this literally tastes like the cream and parmesan packed version in Cheesecake Factory. We decided to make this sauce as simple, easy, and cheap as we could. So the base is a roux made out of flour. It’s completely cashew-less and has no vegan butter. This is because we know that cashews & vegan butter can be hard to find in many states and countries, and because they can be quite pricey. We know that there are many people on a budget. The great thing is that this recipe easily feeds a whole family, and you always have flour & oil in the cupboard. This recipe can also be easily customized. The sauce is the real base, and then you can use whatever veggies/fillers you have on hand. We love mushrooms and sun-dried tomatoes in our Alfredo. But you can use spinach, bell peppers, zucchini… whatever you want. We love tempeh in the recipe; it tastes amazing when lightly pan-fried. But you can use vegan chicken, seitan, or any vegan meaty alternatives. This can also easily be turned into a vegan and gluten-free fettuccine alfredo recipe if you follow the gluten-free options in the recipe below. Please comment if you have any questions or ideas. VEGAN FETTUCCINE ALFREDO RECIPE (with gluten-free options)
- ½ Cup of Vegetable Oil (or vegan butter)
- 3/4 Cup or 1 Cup of All Purpose Flour (add 1/4 cup at a time) (sub with GF flour for GF version)
- 1/3 Cup of Nutritional Yeast
- 10-20 Cloves of Garlic (We love garlic, so we used 20. If you don't, use only a few)
- 6 Cups of Unsweetened Vegan Milk (give or take ½ a cup, we used almond milk, but Costco OATMILK TASTES THE BEST!)
- 2 tsp of Sea Salt (to taste)
- 1lb of Mushrooms (We prefer portabella or crimini mushrooms for the meatier taste & texture)
- 1 Large Onion
- 3 oz of Sun Dried Tomatoes
- 1 Pack of Organic Tempeh (8 oz, we buy ours from Trader Joes for $1.99)
- Pinch of Red Pepper Flakes
- 2 tsp Soy Sauce (Substitute Tamari for GF version)
- 16 oz of Vegan Fettuccine Pasta Noodles (Use GF noodles for GF version)

You’re absolutely right: This is the BEST vegan fettuccine Alfredo! At least the best I’ve ever made. I used chickwheat (mock chicken) instead of tempeh and rigatoni instead of fettuccine. The result was EPIC! I had some leftovers for breakfast and lunch this morning and like a lot of Italian dishes it tasted even better. Thanks for posting this recipe!

Okay, so I just saw that the last time I commented on this video was 8 months ago. GUYS. GUYS!! THIS IS FREAKING DELICIOUS!!! I just had to come on here and show the love because man I've made this vegan alfredo soooooooo many times. In obsessed, I even made it for my Chrisymas Eve food, that's how delicious it is. I've made it with Cashews as well but I really love how I don't have to use cashews and the recipe is just as fire🔥🔥🔥. Thank you for keeping this so affordable that I can make this all the time, since I'm like always on a budget. Because honestly people don't do the best recipes with certain vegan foods like this, that are more 'luxury', by not thinking about the price tag enough. Yet when I've made more expensive recipes for vegan alfredo they never came out as amazing as yours, and I would get disappointed until I came across your video recipe 8 months ago and I now make this ALL THE DANG TIMEEE. I love you!!! Haha I'm just so happy with your recipes♡♡

I'm glad you think so! Without the oil you can probably cook the flour with a vegan milk. You can also do this with cashews instead.

Hi, sorry for the late reply. It would still work but it wouldnt have the same flavor. The nutritional yeast adds a lot of Umami flavor and a bit of a cheesiness. We havent tried it without it, but it should still be good, even if not as good as with it.

We use vegan milk, all of our recipes are vegan. No dairy :)

You can also blend oats together with milk and make oat milk if you have it. That should work well too. About 1 cup of oats for every 3 cups of water (because we want it to be a thicker oat milk). Blend together, strain out the bits, and there you go.

Was so excited to find this recipe while realizing I had all the ingredients! Haven't had an alfredo pasta in a while(5 years) because I haven't come across a vegan one. I just finished making what I could make, and sadly I wasn't able to make this dish. I have never made roux made out of flour so I poured the WHOLE 1 cup of flour into the heated 1/2 cup of vegetable oil and after stirring FOR A WHILE, I decided to youtube how other people make roux made out of flour. I realized I was supposed to pour small amounts of flour while mixing it with the oil.......this was not stated in the video or description >.

Hi Grace, I'm so sorry for your experience with the roux! Honestly every time I make this recipe I just dump all the flour in at once. For me as long as the heat is on, mixing the flour and oil does the job. Sometimes if it's more of a paste (if I packed my measuring cup with too much flour), then I just pour in a bit more oil to compensate. This is more of a laid back roux, because it's a thinner roux. Not a doughy roux. If it forms into a doughg ball thing then if you add more oil that'll do the trick. Otherwise dumping all the flour will still fry it with the oil after 5 minutes or so (depending on the stove heat). I think from my experience that maybe you packed the flour too much into your measuring cup and it became more than 1 flour. With measuring flour we have to either weigh it, or fluff the flour with a fork and then spoon it into the measuring cup without compressing at all (to get an accurate cup of flour). I cant think of another reason why with this 1:2 ratio that it would turn into a dough ball. Adding more oil will fix it. I hope that helps. I have never poured the flour in in small amounts. In this video I poured the 2nd half of flour off camera because I forgot to pour the whole amount. But every time I make it I just dump all the flour at once. Then I mix with my spatula with the heat on medium-high. I'm really sorry for your experience and for how excited you were. I really hope you try making this again because it really is so so delicious, especially if you havent had alfredo in so many years (and especially if you use a neutral richer vegan milk like oat milk). But I understand if you don't trust it to try again. I really hope you do though. Sometimes I just make the sauce and add spinach & broccoli and my family loves that too (my parents arent vegan and they loooove this sauce) 💜

@@TheVeganTwins Hi guys! Thanks for engaging with me. I actually tried this recipe again today and it was a success! Both my sisters liked the flavor and got seconds. I think the issue was within adding the yeast. That's when the roux became tough and had to keep stirring while adding milk. It was so tasty and I'm glad I have left overs for later!

Well done girls! i came here from PICK UP LIMES (after reading your comment about starting your own channel) and i must admit that i did not expect to be this impressed! Good job! This made me hungry just watching! im definitely gonna try making it myself! i reckon students and lower income families and multi-person households will go CrAzY for this budget dish as it seems to make HEAPS of serves for a very small amount of money! Very smart of you guys, exchanging the luxury ingredients usually required in such a meal (like cashew nuts and mock-chicken) for cheaper items. Very thoughtful of you to include the more common & accessible versions of specific ingredients and pantry staples, so that where ever in the world we are viewing from, it should be possible for ALL OF US to give this recipe a crack! What is the correct amount of oil? I used 1/2 cup as listed, but that seemed to be too much. Had to throw out to much money. Is it actually 6 cups of milk? Seemed to be too much too. Please help I’m dying for Alfredo sauce

Hi Monica, yes those amounts are accurate. They may seem like a lot, but they are accurate. You can definitely make a smaller batch though, but the ratios would stay the same. For the vegan milk, add 5 cups and then see if it's enough for you, then add more a little at a time. But 6 cups is just about right, and depending on the flour you use, you might even need a little bit more.
