My students are always surprised to learn that sushi means vinegared (or soured) rice (su shi). They, like many people, associate sushi with raw fish (sashimi). We make our own sticky rice by cooking 3/4 cup short grain brown rice and 1/4 cup sweet rice, which is inherently sticky, so it simulates white sticky rice, and also adds fiber. Sometimes we use purple rice (which is gorgeous) in our sushi rolls, and we've also used leftover (cold) quinoa, mixed with a dab of water to make it stick together for rolling.

Thank you. Short grain brown rice works great to make sticky sushi rice as well as subbing for arborio rice in risotto. You can make SOS free pickled ginger by slicing ginger thinly and marinating in California Balsamics Ginger vinegar thinned with a little water.

Looks delicious but I kept wanting to see you add edamame for more protein (plus it is delicious)! Maybe that makes it too much of a poke bowl but that is what I would do. Anyway, yum!

You don't need a bunch of protein. This is what hurts people. Breast milk only has 5 percent protein. Humans don't need much. You need good sugars to maintain your health. You aren't a growing baby. Stay away from all fats and most protein.

I made this last night and it was delicious. A keeper! For those who don't want to eat as much rice (this is not a criticism, just a suggestion), you can do 1/2 rice and 1/2 cauliflower rice. In any case, what a fun, delicious and company-worthy recipe!

Yes, I think that grinding the Nori disperses the flavor or evenly and then you don’t get a big hunk in your mouth. It’s more subtle.

A deconstructed plant-based sushi bowl is something I eat many times a week. So satisfying and fresh in hot weather. I live in Mexico, so just use plain white rice as the sushi rice isn't as available where I live, and cook my rice in the instant pot.

I always say a sushi bowl is the deal of the century. I go to a lot of restaurants that serve sushi rolls and a poke bowl which is basically a deconstructed sushi roll but it actually has twice the amount of ingredients and it’s the same price. We pay for the labour of the person who has the skill to make the rolls.

I was very disappointed when I overcooked my brown rice in the Instant pot once, but since I try to never waste or throw out food, I just stashed it in the fridge to make veggie patties or something. Turns out once it cooled it wasn't mushy anymore, but more like sushi rice, so I made a bunch of vegan sushi rolls that were great and now I often overcook it on purpose!
