When my kids raised chickens for 4-H, we couldn't get them butchered until November, so we had 3 chickens that weighed 20 lbs EACH, Butchered and cleaned!!! My grandmother always raised chickens, and she came to visit, so we showed her one of our chickens from the freezer. She said it looked like a turkey! It made my kids proud!

That's the size of chicken I grew up with. For those that aren't aware that chickens used to be sold this big, this means that I am older than your grandmother. Also, in those days families often had 7 kids or more so you needed a chicken this big for one meal to feed them all .

I am SOOO GLAD I FOUND YOUR CHANNEL. I have never even heard of Soatchcock chicken before in my whole life. I am 62 and am from New Mexico. My sister and I were raised by our father. I never saw or heard of the women in my life Spatchcock a chicken. That is SOOO SMART!!! That was the First thing i made after watching Gina Young from IN THE KITCHEN WITH GINA YOUNG. I spatchcock all my chickens and turkeys, and I’ll do again to my turkey tonight and let the skin dry out in the fridge uncovered all night for extra crispy skin. It works a treat. We raise chickens for eggs (they’re all brown eggs) and peeling a fresh egg can make you wanna pull your hair out, but I found a way that works wonderfully. I steam the eggs in a pot with a steamer basket in it for 10 minutes, put the eggs in an ice bath for 5-10 minutes and then the shell almost falls off by itself. I swear it’s magic. 😉

Did my first Spatchcock Turkey for Thanksgiving this year with my American teacher colleagues. It took a while to FIND a turkey in Germany (they do Goose here). I learned a lot on this video.

For my cranberry salad, I use 1 large box of jello, 1 cup granulated sugar and add the cranberries, diced apples, diced orange, crushed pineapple, walnuts and a teaspoon of lemon juice. Delicious!

I can my cranberry sauce with orange juice, drained pineapple & add orange zest (same time as butter)before jarring it up. Recipe called for zest of a whole orange-first batch was REALLY orange. I even added the chopped orange in a batch too bc we don’t eat them raw. I gave jars of cranberry sauce to my pet sit clients for Thanksgiving. Perfect & beautiful in the jars! I love pineapple in my cranberry sauce(plus it really stretches the batch) Cranberries have a lot of natural pectin & gel up wonderfully.

I make the cranberry orange relish you mentioned on the back of the package. I use my KitchenAid meat grinder attachment, grind up the cranberries and sliced oranges including the orange peel. I've done this for many, many years and it works wonderful and is quick. Add the sugar, cover and refrigerate for 24 hours. Taste it to see if you may need more sugar, then add more sugar as needed. I usually make a triple batch. I freeze the extra into quart ziploc bags and when I'm hungry for it, I cut the ziploc bag away from the frozen cranberry and place the frozen chunk in a bowl to defrost. If you defrost it in the bag, then you lose a lot of goodness stuck in the bag. Enjoy! Love, love your podcasts!! A new follower for about 10 days or so. I cook my cranberry on stove with sugar diced apple, cup up dried apricots, oranges that I whirled I. Food processor and half cup jack. Cook 3 bags at @ time. Put in pint jars and pressure can. Great gifts. My husband eats it from the jar!!!

Just finishing watching the rest of the video. And I make my hardboiled eggs exactly the same way and after the water comes to a boil, I turn the fire off and put a lid on the kettle and let them set for 20 minutes and them place them in a bowl of cold water and ice, sometimes. They peel well most of the time.

Hi Renae ! I have never made homemade cranberry sauce and I didn't realize it was so easy. I bet it tastes better than the canned stuff. Thanks for sharing how you cook it up. I love the big cast iron skillet you have. How convenient to be able to cook such a big bird in it. We live close to the Lodge cast iron outlet store and that is where I generally get my cast iron cookware and accessories. Next time I am in there I am going to look for the big boy skillet like you have. lol I do have a large cast iron skillet but not as large as the one you have. and yes.... it can be heavy, but the food cooks up so nice in the cast iron. Thanks for sharing all your wonderful recipes. You are a gem.

I'll tell you, Rene, the only way to go is a whole-house generator. We're never without power. Electric goes out and within about 5 seconds the whole house is back to normal!

I have a hard time peeling eggs (stupid arthritic fingers) BUT I found a secret & it works every time! For 4-6 eggs: add to cold water 1 Tbsp salt & 1tsp baking soda, cover, bring up to a boil for 1 min, keep covered & let sit til cooled off but not cold. Rinse & submerge in ice water. Peels will come off perfectly! The ice bath causes the egg to contract away from the shell & the salt/soda mixture helps the shell to release. I never have green yolks either.

That bird is a Cornish Cross....we raise them as our meatbirds. Hatch to 8-9 weeks = a 7-9ish lb. dressed bird.

Why don’t you dump the hot egg water and run cold water over the eggs? In Germany they sell hard boiled eggs (color decorated like at Easter ) and they sit on the shelf for a while. The bakers sell them next to the daily fresh breads n goodies.

I haven’t spatchcocked, but I do roast my chickens with peppered bacon stuffed under the skin. I tried that, with a compound butter on the skin once, but there was way too much fat. I love making cranberry sauce. Mine is a different recipe but my kids and I love it. It’s fresh cranberries, frozen raspberries, an apple, a bit of sugar, and apple cider. If you do a live, I’d love it. I won’t lie, I’m not a fan of the 2-4+ hour long ones. I know a lot of people love it, though.

I have never seen that big of a chicken and I have NEVER heard of Spatchcock and man you got a heck of a deal on that price of him. I might try that on a whole chicken sometime. And I am with you I will NOT do a review dis honestly either. There is not enough money or free product to say something about a product that is not legit. I think you have more of our respect by being honest the way you are. And sometimes I think its our cell phones or something that is putting that out there for people/companies to hear what we talk about. And yes I have some SS pans that are about 7 years old and they still look almost new there are some scratches and the bottoms are clean. One got burned by someone while I was in the hospital for 2 months no one admits to it. I do use vinegar on mine to clean the bottom when it gets blue and stuff I love my SS pans! But great video. For $1.58lb I would have got like 10 of them ... My local farmer where I buy my whole chickens cost me $3.89lb which is a good price I think ... I'll be getting my side of beef and pork in February ... I can't wait.

So glad you got your ring fixed. My ring lost a stone while we were putting up chicken wire for a pen. Never got it replaced for fear of what it would cost. Was the cost really high?
