Yes the water running thriugh the coffee much too fast was a problem I noticed right away when I used this machine but I actually found my own workaround to fix this issue. Rather than buying paper filters I actually decided to go with a finer grind of my coffee beans. It was finer than corse but not exactly as fine as espresso grind. The finer grind held the water much longer and I was able to make a much better tasting coffee. I may try using paper as you suggest though because I want to be open to all ideas to make a better brew.

Some tricks I found to using the metal filter - still use a fine grind as to allow the water to stay in contact longer - let the coffee settle before pouring after brew time, don't mix - expect a coffee closer to french press since the paper filter isn't there pulling out the silt and fines

I'll be real, I bought this because I wanted a pour over and this is the one you can find at Walmart. The one I got is an 8 cup Bodum with a cork sleeve and leather tassel instead of rubber. I thought with the metal filter I'd forego the paper filters, but now that I watched this I'll be using paper filters. Sadly they were out of gooseneck kettles, so I'll be winging it with a tea kettle for now.

I have a Bodum, I also like to boil my coffee in water on the stove and use the provided filter to separate the grounds from the coffee. Like how the Norwegians or cowboy coffee or military jungle coffee is done. I find this works the best. But different methods for how I’m feeling. Or wanting.

Just my 2 cents here. Why not just get the Hario v60 kit, pretty cheap on Amazon and the paper actually fits the brewer. And it’ll taste the same since the paper filter is the one doing the job. This does not taste better than Chemex, it’s just a different flavor profile
