Okay, first of all. As a Filipino, I have mixed feelings about this because nobody's telling you how to properly eat it. But on the other hand, I understand that balut is an acquired taste, so it probably doesn't even matter. Ideally, you eat this while you're drunk. You gently crack the bottom of the egg and flip it upside down, slowly chip away the shell and drink the broth. Add some salt and vinegar (sukang pinakurat) and eat the insides (except the white rubbery part). Also, for beginners/non-Filipinos eat the 16-day egg and nothing older.

balut is legit delicious. The liquid inside tastes like soup, the duck and yolk part tastes like duck. The beak and bones arent fully formed but they do have a texture. If you have a chance to eat hot fresh balut, go for it.

Balut is like those foods that you either like them or you don't. Like vegimite. Lots of Filipinos don't like balut either and its understandable. I like balut but I don't eat the chick, just the "soup" and the yellow part.

A friend tricked me into eating this (a chicken one) in China, it’s not too bad if you don’t think about it, tastes like chicken soup and also eggs, had it with a large pinch of garlic or something and it’s late at night so I didn’t get a good look into it or I might throw up too. It should be eaten with spiced vinegar and salt. The juice inside is delicious and the duckling inside is very soft that melts in your mouth. Not all filipinos eat that though, those who haven't tried didn't want to try. But for me, I can eat more than 3 balut in one sitting.

The real balut is not disgusting. When my family was living in Balutan, Sta. Maria Bulacan Philippines (balutan actually means a place where the baluts are made) in the 80s-90s, almost every house makes balut. You would know because of the "kawa" outside of every house in the neighborhood. You won't miss it because kawa is a big barrel placed strategically on 3-4 hollow blocks or rocks, so it won't fall off. In the middle of the 3-4 rocks, you will see burned wood because baluts then are cooked with wood as a fuel. Its not disgusting because as I remember, its like eating hard boiled egg but the white are much harder but tastier, the color is faded yellow sometimes if the eggs are more than 3 days. The Juice when you crack open the balut has a strange or sometimes strong smell, but when you get used to it, its actually smells nice. Another difference of the real balut to a hard boiled egg is the yellow part, the balut has no yellow part, the yellow part in balut is black. The black part is the fetus, you wont notice that its a fetus because the baluts back then are made with eggs that has just been hatched, not more than 24 hours after hatch. I was shocked on the baluts when we moved to the city, the baluts in the city are actually eggs that are about to hatch from the baluts in the city are the one that is mostly shown in Media. I can't eat them and I have never eat baluts in the city. If you want to eat the real and not disgusting baluts, go to Sta. Maria Bulacan, there are still vendors there that makes their own balut from recently hatched duck egg. But they are becoming scarce because most baluts now are made in the factory but there are still house that makes their own baluts and the home made baluts are not disgusting. Also, aside from Balut, there is Penoy. The difference between Balut from Penoy is Balut are made from fertile egg and Penoy are from infertile eggs. Penoys are much more tastier than the standard hard boiled eggs.

I've eaten 4 of these in one sitting. I was scared for the first one but it was like a medium hard boiled egg. You mix lemon juice and spicy mustard in a little saucer next to it, crack the top, and put a spoon full in. This is was in south philly BTW at a tiny local bar where our cute bartender was from Cambodia. Good times.
