Borgofranco d'Ivrea, a small village in the Canavese, a historical area of Piedmont, still maintains today the features of a territory devoted to agriculture and livestock but stands out for a feature that makes it unique, the "Balmetti", small cellars leaning against each other, where, for centuries, currents of air coming incessantly from the belly of the mountain, at constant temperature and humidity, have been being exploited to keep wine and food away from the summer heat and winter frost… a huge natural refrigerator.
But they are also and above all a meeting place, where you can meet up in conviviality with family and friends.
At the carnival, they come alive with the arrival of processions which, accompanied by brass bands and drums, find themselves celebrating with the typical local sweets, the "Canestrelli", and a good glass of wine matured in balmetto.
