I had my first michelada in Zacatepec, Morelos. Nothing like walking around with almost half gallon of spiced beer in a clay jar and eating tacos for pennies. Nothing has ever come close to that in the states.

@@kimlarios36 Zacatepec Is a beautiful little town. My mom is from there and I used to go there during the summer in my teen's and early 20's. I remember hanging out in the plaza during the yearly fair and even got to dress up as a Chinelo and joined the parade! Lol. I keep in touch with relatives from Zacatepec, Jiutepec, and Jojutla. Things have changed since the early 2000's but the best summers of my life have been traveling through the beautiful state of Morelos.

Cemitas De Cecina is a MUST if you go to Puebla, especially in the plazas of San Pedro Cholula! Check out the queso business in Chipilo while you're in Puebla too, it's where the art and culture of cheesemaking exploded for the region!

Purified Drinking Water Meat is cured with enough salt and pork lard, no chances to get spoiled. Another important thing is that during certain seasons, in certain areas of Mexico, you may just need few min at the shun shine to get seriously burned.

Because the meat is salted and the sun is strong, in less than 30 minutes the meat loses water. All these factors prevent any bacteria from developing enough to spoil the meat. It truly changes the flavor by intensifying it and making the meat tender once you sear it quickly. It’s incredible, believe me. I have dreams about it.

Why people eat hard shell is for the American market and to appeal to Americans which Taco Bell founder came up with so he could perpare his tacos faster he originally sold tacos at a stand which has tortillas and at his time at Taco Bell he helped people pronounce Spanish words so tacos and burritos

I miss cecina so much, I'm from Cuernavaca, close to Yecapiztla but I live in Stockholm now, so far from the good food!! Even then I try to cook Mexican food as often as I can, will never be the same though.
