The Coffee Croissant!

Sometimes the simplest things are the best, I love working with dough.
This one is composed with a simple laminated croissant dough, a coffee egg-wash, a crunchy caramel cover and it’s filled with a coffee soft cream and a crunchy coffee praline.

This is closer to a pain au chocolate/chocolatine than it is to croissant to be honest. Personally i think the perfect croissant is a plain one with nothing different added to it. If you ever had croissants in France you’d probably agree because some of their bakers are literal magicians.
