Over the centuries people from many different cultures have lived and cooked on the Spanish island of Majorca, including Romans, Arabs, Jews, and Christians. They have left a rich cultural heritage in their wake, which head chef Santi Taura has reinterpreted in his restaurant in the island capital of Palma. He has rejuvenated old recipes and has made them star quality.
