A pantry video is how I stumbled on Beaky. At the time I thought this lady is crazy! Who is doing all this work and she’s my age! I already had a garden, so naturally I kept watching. Can you believe I’m now pressure canning my own food! I had a canner a year before I started watching your channel and had never opened the box. You proved to me I can do it! My mother died when I was 11 and my grandmother had dementia by the time I could join her in the kitchen . They both cooked and canned. Thanks for helping me get closer to them and for teaching me what they couldn’t. I wish you nothing but love and happiness!

Dear Becky, Most people don't realize that fruit trees have a low productivity year after a high productive year until they try to rely on their own trees (or local) for self sustainability. It is normal. I plan my fruit canning (apple sauce, butters, etc) to make enough for 2 years to follow the natural process. Then I only have to supplement with outside sources if available when those bad weather/bug years hit which can happen to anyone or any area.

Becky ,my grandmothers were homesteaders before the term became popular. They canned and preserved food. When the canning jars were emptied and cleaned they filled all of them immediately with water. They did not have the plastic water bottles and when they water source froze on the farm they always had a water supply at the ready.

Instead of buying water in plastic bottles you can can water in your jars. It keeps and is good to use for cooking, drinking and sterile for using to clean wounds. Great to have on your shelves

Hi, I'm from Romania and I follow you with great love. We use to keep eggplant in the freezer and it is one of the most loved appetizers here. Eggplants are picked when they are young and do not have many seeds, they are cooked on fire, not just hot coals, let them touch the flame, they are peeled, drained and kept in the freezer. It is prepared like an eggplant salad, basically it is finely chopped and mixed with a little olive oil and salt. Spread on a slice of bread and sprinkle with onion. They are easy to preserve, delicious. We have several recipes, but this one is very simple and does not change its taste even if it is frozen. If you are thinking of trying new vegetables next year, I definitely recommend eggplant.

Hey Becky - quick tip, overripe zucchini is called 'marrow' and it is still edible! It's a quite common vegetable in the UK, and you'll be able to find recipes for marrow easily if you're curious

Funny! As we were pulling our tomatoe cages out this weekend we found a couple of survivors with blooms and a handful of tomatoes. Our temps are very mild and cool 62 degree high with mid 40s lows. What's left in our summer garden is loving these cooler temps. I am right there with you feeding our chickens out of our garden. I want to grow them greens over the winter to feed them while it is cooler here. With La Nina in play we will have a warmer possible drought winter. Blanche your green beans then plunge in cold water then vacuum pack and freeze. I like frozen vetgetables hardly ever buy canned.

So enjoyable Becky! Thanks for sharing the bounty of your harvests with us! Your organization comes from years of experience in those freezers, on the shelves and in the big bins. Glad you have safety alarms to protect those valuable meats! Seems we always have at LEAST 1 or 2 big storms every year and we are without power. After 4-5 days of hearing generators roaring we are ready to have a melt down ourselves! In town, they often have block parties where everyone brings out their meats and grills and they hold a HUGE neighborhood picnic! Everyone is invited, music is playing, new friends are being made and it just makes the very best of a bad situation! And the cases of beer go down easy in the 80-90 degree temps also! Can't wait for next year, I love growing my own herbs!

Hi Becky I enjoyed this tour - it’s always interesting to see what is going on at the homestead. I buy my sourdough from a local baker, slice it at home, and freeze each slice in its own bag. As an old now single this is perfect for a piece of toast, or for making a small bread and butter pudding. I have found you are right about only giving shelf space to food you want to eat as it saves both space and money. Thanks again for showing us around. 🦘🇦🇺

I love my canned ground beef! It makes a flavorful base for beef vegetable soup. Isn’t it nice that we can be different, but still love canning? I recently made the soup with home canned beef, carrots, kidney beans, green beans, and tomato. Added frozen corn (that we put up) and 1 can of store peas. It was delicious and so easy!

Pro tip: when you are roasting from frozen you will have an access of water. Even with fresh veggies like tomatoes If you put a metal grate on the pan the veggies will get roasted in all sides and the liquid will fall to the bottom. Huge help when it comes to preserving things like tomatoes and peppers. They are very affordable you can get them for under $20. Saves so much time. I discard the liquid saves literally hours when making my tomato sauces.

I hope you have a good stand by generator in case the power goes out for any length of time. We have one and love it! You have an AMAZINGgrocery store in your house! Since my husband and I have retired, we use our spare bedroom as a pantry and keep it well stocked. When you get to be our age you don't like to venture out in winter weather to run to the store!

Hi Becky. I,too, love growing dry beans. Your Scarletts look fantastic! You might like to try “Christmas beans”. They are a variety of giant Lima bean that some in the Midwest call “butter beans”, but are also colored with pinkish-red splotches (thus the name). They are absolutely delicious cooked with plain butter and salt, or seasoned with garlic and butter and other herbs of your choosing. They also are wonderful in soups. I fell in love with them, as well as the Scarlett runners. At the end of the season, I make a dish using tender zucchini and yellow squash, tomatoes, onions and a mixture of cooked fresh beans like these. Well seasoned with salt, pepper, and Old Bay seasoning and olive oil, it is the most delicious dish. Thank you for sharing your life and hard work.

I'm from the midwest and we use canned chicken here Becky. It's good for a couple quick meals. 2 of my favorites are shredded chicken sandwiches and creamed chicken over toast or mashed potatoes with peas. Shredded chicken is made with cream of whatever soup and stove top stuffing! Heated on the stove, it's ready to go. Creamed chicken is just white gravy with canned chicken on it. That was my mom's quick meal when time was short. Maybe you just needed ideas for your canned chicken? Try the sandwiches! (It might be Midwest thing?)

I grew up in the Midwest (Indiana) and we sometimes made "short-cut chicken and noodles" using home-canned chicken and homemade thick Amish-style noodles - served over mashed potatoes, of course. Not quite the same as the long version, of course, but a pretty fast dinner that was close enough! 😊

This year we had so many tomatoes. I made 3 cases worth of Ketchup which we love, BBQ sauce with the Black Krim tomatoes, tomato sauce, tomato pizza sauce, Enchilada sauce, chili sauce, Tomato water for cooking rice and adding to soups, Tomato Jam which I use on sour dough bread with a few scrambled quail eggs and avocado for breakfast, I also use tomato jam when I make lentil meatloaf, Salsa, both garden and hot, tomato paste which I freeze in ice cube trayps. We love tomato products.

You should cut those garlic bulbs in half and roast in the oven. Then you can squeeze the roasted garlic out and freeze in scoops. It tastes great and you don’t have to peel it all! It´s like when you caramelize onions and freeze that.

canned green beans - blanch them before you can them. For the ones you have, put them in a pot with some onion and some bacon grease (bacon in it will work), salt and pepper. Cook them low and slow until most of the liquid is gone. They are so good! You can also cook them with small potatoes. Country cookin'!

I used to buy whole chickens a lot when I was cooking for 5 of us. I would roast 2 or 3 at a time, and then freeze one. My husband always said that the smaller chickens were more flavorful and tender. You can't find them anymore at the stores usually. 3 lbs was a good size

I'm a fairly recent convert to canned cranberry sauce. All my life I just made it fresh when I needed it for a holiday meal. In 2020 we didn't gather for holidays as usual, the most convenient thing to do was can small jars of cranberry sauce and send one in each care package to all my family members. It worked out so well that I have continued the practice. Having it in the shelf takes one thing off the to-do list for the big family gatherings.

for the spray oil, they make re-fillable spray oil bottles that you can fill with whatever oil you prefer to use. Might be a cheeper, long term, less waste alternative.

We have a peach tree, and this year it produced so many that I canned 24 quarts of peach pie filling & 18 pints of peach butter. I love to make an orange Marmalade vinegarette for salads. It's so delicious on a fresh salad. I hope you try it.😉😊

I've freeze dried onions and peppers this year and while I love them both frozen for easy use the freeze dried ones are just as good! I've also freeze dried onions and garlic them powdered it. It's amazing and I will be doing that again!

I have a friend locally who owns a chateau and vineyard with her husband. He grows the grapes and makes the wine. She runs the château B&B and a tea house. They have grown 4 kids. One works with his dad making wine. A couple of years ago he branched out and started raising chickens, pigs and chicken. I don’t have freezer space, but have bought chickens from them. My favorite local restaurant uses their pork and beef. I love using local!
