The timing of events in Chapters 16 and 17 seem out of sequence to me. In Chapter 16 he is serving Saul and then in Chapter 17, Saul doesn't know who David is???

That's a good point. My take is that we see Saul not take David very seriously at the beginning before he has victory over Goliath. Once this happens, I think Saul wants to know who David is and who he is related to to better understand where he comes from and if he is a threat to his rule.
