Well when you practice enough you can train yourself to play as well as he does. I'm not as good specifically at platformers as he is, but I remember when I was a teenager and the Guitar Hero phase came through, at first I was horrible, had never played any real instruments in my life, then became one of if not the best player there was (according to the ONLY official online scoring website, not just my own personal experience) in the Hard category (I stopped practicing Expert due to school and all), so it's really just about how much time you're willing to invest into these games to get good at them...

The thing is, I think he is not only super good at the game itself but also really intelligent and extremely good at memorizing patterns of the levels and inputs that have to be done. I think he could beat any level blindfolded after like beating it 10 times for practise

You'll notice that he goes down farther than you'd expect. That's because you can't bounce off a stationary shell. He's actually kicking them into the wall and bouncing off of a moving shell and jumping on the moving shell stops it in place again, also called the infinite 1-Up trick. 9 months late but those are the mechanics of that trick, it's pretty precise.
