Chinese person here, Dylan was right at the end. KFC is crazy popular, specifically in mainland China. From my last visit to the mainland, the restaurant's popularity is because there's no competition. They really don't have any other fried chicken locations other than local shops and some other places... Also, there's way more quality insurance and whatnot, so the food is very good... I live in Hong Kong, and this is entirely based on my visits to Hangzhou, Shenzhen, and Shanghai, so please let me know if you have other thoughts or...whatever (⁠ノ⁠ಠ⁠益⁠ಠ⁠)⁠ノ

I've lived in Kentucky for nearly 70 years and, yes, KFC used to be really good but after the Colonel left, the chicken became slimy and, yes, mix some flour with tap water and it's wallpaper paste. But it's very popular in Korea and in Japan a bucket of chicken (reserved in advance) becomes a Christmas feast.

The recipes in China, Japan, and South Korea are actually miles ahead of the typical USA ones. They cater to Asian flavors and local trends and are always improving. Customers are willing to pay a premium for the premium branding (great marketing) that we can't seem to reproduce the results here for various reasons, namely, lots of fried chicken competitors focused on food quality and thus, KFC's executives with all their amazing profit-driven decisions, focused on cutting costs and thus lower food quality. It's the sad outcome of a free market where if your product/services suck, your business will falter (perhaps that's a good thing to always improve or you will become obsolete.)

There is a book called "KFC in China" that highlights the success factors and how in other Asian countries have proven the need for new recipes does not always mean abandoning the original recipe. Something as simple as double or triple frying their chicken to maintain crispness isn't reproduced here in the States for some unknown reasons (possibly food and labor costs). Popeye's, Bojangles, Church's that primarily focus on fried chicken recipes have overtaken KFC in many ways. KFC as a brand is the only thing keeping them from going bankrupt since many of us still believe in brand loyalty. How far will it take their business based on branding and mediocre products will be difficult to guess.

ANY ONE in America who has never tried KFC in China ..you do NOT know what you are missing. They cook every single piece of chicken to order, every single side dish, to order, there have been KFCs in America caught using leftover chicken and side dishes Bec the franchisee is penny pinching. Not in china My manager in china had a KFC in 2014 that was SO BUST, he actually had to turn away hundreds of customers every single day when he first opened... He was extremely intelligent though, Because every single customer who he "turned away" he would give them a 50% off coupon for a bucket of chicken three sides and 3 drinks, and people were so shocked and surprised and delighted to have such a good coupon they didn't mind coming back later on in the week. He completely sold out of chicken 7 times in the first two months of his stores grand opening. I don't know HOW he was able to pull this off, but he was able to obtain the actual ORIGINAL recipe for colonel Sanders original gravy.... the kind that takes all day to make, and some people go to the restaurant just to buy the gravy to take it to go, nothing else just the gravy... It is one of the most profitable KFC locations in the entire world, the restaurant smells so good you can literally smell it from outside the building, as the restaurant grew in popularity, rumours began to spread about how good it was, that even Xi Jinping HIMSELF tried the food and gave a thumbs up, after that, business EXPLODED even more... my manager was forced to buy an air mattress and bring it into the building into his office to sleep because he was forced to keep the restaurant open 247 because of how busy it became, they get shipments of fresh chicken DAILY, fresh vegetables, fresh everything, they are so packed you can't even get into the building, there is a line to get in the line, this is not an exxugration at ALL there are literal photos online floating around of how packed this place is

Then he franchised his own. If you look closely in the James Bond movie Goldfinger there are 2 FBI agents. When Bond gets on the move, one agent runs out of a restaurant to jump in the car with the other agent and they take off.
