Pulled pork shoulder is the easiest thing to make ever...pop a pork butt or shoulder in a crockpot (slow cooker) add garlic pepper salt /before work set it on low and by the time you get home its pulled pork. takes a few hours..remove to a large bowl and shred it using 2 forks...bbq, siracha, can be added after shredding

Great video. Much check that place out next time I get to London. I am not familiar with the term "dirty bagel" I don't think it is used here in the US. We would think it was a bagel that might have been lying in the street for days and was covered in dirt and grime. Love the British slang.

Dirty Bagel is common in the Northeast and in some other large cities. Also the term "everything bagel", just means a bagel with everything on it.

Love peppers on my food. Really reminds me more of American food, just add raw sliced white onions and some sliced pickles. For a side, chips or a good potato salad and a glass of ice tea. Stores like HEB sell ready made pull pork do your markets carry these products? Just add your favorite Sauce. During the summer you can swap the tea for a cold beer. You can also use brisket instead of pork. Do they sell ready made brisket?

Lia asked about plain steamed buns. There are six or seven different shapes for steamed buns, but most use pretty standard ingredients. I have included pictures of 2 shapes, one that is for filling after steaming, and one that is for steaming and meant to be eaten without filling. I have included two recipes, one in imperial and one in metric. I didn’t included the instructions for the metric, but it is basically the same as the imperial. I also included a recipe for not-very-spicy dipping sauce and one for spicy dipping sauce. Gua Bao Or Chinese Steamed Buns Serving 4 big or 5 smaller buns cooking time 25 minutes + proofing time Ingredients 2 1/2 cups all purpose flour 1 cup lukewarm water 2 tsp dry active yeast 2 tsp baking powder 1 tbsp sugar 1 tbsp vegetable oil + a little more for brushing a couple pinches of salt 1. Activate the yeast by dissolving it in the warm water. 2. In a large bowl mix the rest of the ingredients. Lightly whisk to mix well. 3. Pour the activated yeast mixture into the mixing bowl and start mixing and kneading and bringing the dough together. 4. Pull it out on a well floured surface and knead the dough for 5 to 7 minutes. Sprinkle the dough with little dry flour if the dough is too sticky. 5. Transfer the dough into an oiled bowl and brush some more oil on the surface. Cover with a kitchen towel and keep in a warm place to proof for 1 1/2 to 2 hours or till it doubles in size. 6. Once the dough doubles in size take it out on a floured surface. lightly press to knock the air out. Roll the dough into a log shape and divide in 4 equal parts if making bigger buns or 5 equal parts if making smaller buns. 7. Roll the parts into a ball shape, cover and keep in the warm spot again to proof for 30 minutes. The balls will double in size. 8. Roll the balls out into oval shaped of about 1/4 inch thickness. Fold in half and place a parchment paper in between to avoid sticking. Repeat with other balls. Proof for another 30 minutes. 9. Steam the buns in a steamer for 10 minutes. Remove the buns from the steamer and fill with desired combination of veggies and sauces. Serve. Metric ingredients: • 350 g medium gluten flour (makes 6 buns). It is best to use fresh flour less than a year old. • 200 ml water at room temperature (20 C). The flour I bought is dry, so I am using a little more the water, however, you may possibly only need 190 ml. • 4 g Yeast • If you buy 7 g of bagged yeast, use half of it. • 3 g fine salt for these, roll into balls and steam Not spicy dipping sauce Ingredients • 1/4 cup soy sauce • 1/2 teaspoon toasted sesame oil • 1 clove garlic, minced • 1 teaspoon green onions, chopped 1 tablespoon water 2 tablespoons hoisin sauce 1/4 teaspoon minced fresh ginger 1/2 teaspoon white sugar Directions In a small mixing bowl, combine soy sauce, sesame oil, garlic, green onion, water, hoisin sauce, ginger, and sugar. Mix well, add additional hoisin sauce to thicken mixture to your desired consistency if needed. Cover the sauce, and refrigerate for 1 to 2 hours to allow flavors time to blend. Before serving, pour mixture into a small saucepan and heat. Serve warm. Spicy Dipping sauce • Spicy and Sour Sauce • 3 tablespoons light soy sauce • 1 tablespoon spring onion (chopped) • 1 chili (seeded and chopped finely, or for extra-spicy, don’t seed) • 1 cloves of garlic (finely chopped) • 1/2 tablespoon lime juice • 1/2 teaspoon sugar • drizzle of hot sesame oil • Mix everything together and all to rest for at least 30 minutes to allow all the ingredient’s flavors to combine together properly. Store in a sealed container in the refrigerator until ready to use. (Use within 3 to 4 days).
