I don’t think troll levels (even those that have good design) are his thing. Everyone can have something they prefer. Like speed-runs, exploration or one-screen puzzle levels

It's great seeing Ryu play troll levels because he's not used to them. The troll meta has evolved so much based on the players who have played thousands of them to thwart their expectations. Ryu comes in with way less knowledge (but badass skills) and avoids some of them by simply not thinking too much and falls for others because he's not too used to them. Different experience but still amazing compared to watching other content creators more used to trolls.

The level changing after the checkpoint is done with switch states. They're off when you reach the checkpoint yourself, and then restarting sets them to on (or maybe it's the other way around - I don't remember). That allows for trolls where the level changes between loads.

Or, at least, that's the simplest way and likely what that level used. But I'm pretty sure there are several other things can achieve that effect, even some that can be remembered after deaths instead of just using spawning back at a checkpoint alone, like mechanisms triggered off red coin count being popular.

"How did he reverse them" usually in troll levels, you just take advantage of on/off-switches being reset once you die/start from a checkpoint.

Something happened behind the scenes, that he fell out of the Mario Maker Comunity. There are whole threads about it on Reddit, but nobody knows the answer. We might never know for sure what really happened.
