Try to beat it as a brawler but dont use unarmed. Get the heaviest armor in the land and use the slowest, biggest weapon. Its the closest they have to hard mode without hard mode.

This game is just spectacular! The Dev is very committed and is always improving and adding cool new features. Of all the Rogue likes out there this is the one I love the most. It has its own vibe and is unique in many ways. Seriously I can't recommend it enough.

Bought the game a few days ago, does anyone know if you can chop trees down for wood or mine?

To get wood you can pick up loose sticks in the forest. There is no mining skill, but you can find ores in caves and other places and pick them up.
