Italian Nua Cake (Ponge Cake filled with Pastry Cream).
🛒 Ingredients (22 cm / 8.6 in diameter springform pan):
Cream:
🔸 500 ml milk (2 cups)
🔹 4 large egg yolks.
🔸 120 g sugar (½ cup)
🔹 30 g all-purpose flour (3 tbsp)
🔸 20 g cornstarch (2 tbsp)
🔹 A dash of vanilla extract
Sponge cake:
🔸 3 large eggs
🔹 300 g all-purpose flour (2 cups)
🔸 2 plain unsweetened yogurt (250 g / 1 cup)
🔹 1 sachet baking powder (15 g / 1 tbsp)
🔸 zest of 1 lemon
🔹 150 g sugar (½ cup + 3 tbsp)
🔸 80 ml sunflower oil (⅓ cup)
*** For best results, it is advised to follow the amount of ingredients in grams.
🍳 Italian Nua Cake Recipe directons:
1️⃣ Prepare the pastry cream. In a saucepan, put the milk to heat. In a bowl mix the egg yolks with the sugar and the vanilla extract. Then add the flour and mix again. Add the cornstarch. When the milk is hot, pour a ladleful of the milk over the mixture and stir until well blended. Add a second ladleful. Now you can add the rest of the milk while stirring.
2️⃣ Pour the whole mixture back into the saucepan. Cook over low heat, stirring constantly, until you see that a thick, but still fluid cream is created. Strain the cream into a bowl to remove any lumps. Cover with cling film, keeping it in direct contact with the surface to prevent crusting. Allow to cool completely.
3️⃣ Prepare the cake. In a bowl, beat the eggs and sugar with your electric beaters for a couple of minutes, until frothy. Add the yogurt and beat until smooth. Whisk in the oil in a thin stream. Add the lemon zest and mix a little.
4️⃣ Mix the flour with the baking powder and incorporate it in several batches and sift it into the mixture.
5️⃣ Pour the batter into the mold, previously lined with greaseproof paper on the base and sides.
6️⃣ The pastry cream is now chilled. Remove the film and beat it for one minute with the electric beaters to make it creamy.
7️⃣ Spread several spoonfuls of cream on the surface of the cake batter. With a skewer stick, make tornado-shaped grooves in each mound.
8️⃣ Bake at 180 ºC / 350 ºF, with the oven preheated, 45 minutes. Let cool on a wire rack. At serving time, sprinkle a little icing sugar on top.
👌 Note:
🥧To make the pastry cream, you may use just flour or just cornstarch. I like the result of the combination of both, but make it as you like it best.
🥧You can use a 24 cm pan. In this case, with 40 minutes of baking it will be ready.
🥧 After 30 minutes, if you see that it is too toasted, you can cover it with aluminum foil for the remaining baking time.
