Recipe 1:
1 lemon.
2 cups milk (480 ml / 16 fl oz).
Heat the milk for 6-7 minutes without boiling so that it is infused with the lemon peel.
Allow to cool to room temperature.
2 eggs.
3 tablespoons sugar (60 g).
2 tablespoons corn starch (30 g).
Add the mixture to the milk and cook over medium heat, stirring constantly, until it thickens.
Allow to cool to room temperature.
80g butter.
A pinch of salt.
1 teaspoon sugar.
2/5 cup water (100 ml / 3.4 fl oz).
2/5 cup milk (100 ml / 3.4 fl oz).
When the butter melts and the mixture begins to boil, add 3/4 cup flour (120 g).
Cook over low heat for another 2 minutes, stirring vigorously.
Spread the dough out to cool faster and let it cool at room temperature for 5 minutes.
We need 3/4 cup beaten egg (180 ml / 6 fl oz).
Depending on their size, they usually consist of 3 to 4 eggs.
When you make a channel in the dough with the spoon, the dough should return to its place. This indicates that the dough is just right.
Place in the preheated oven at 170 C / 340 F for 25 minutes, if possible with the fan switched on.
Then bake for another 5 minutes with the oven door open 2 cm.
At the end of the baking time, turn off the oven and leave it in the oven for 10 minutes.
1 cup mascarpone (250 g).
3 tablespoons of powdered sugar (60 g).
Mix well.

45 g cornstarch (1.5 oz).

4 eggs.
Separate the yolk from the egg white.
100 g room temperature butter (3.5 oz).
100 g sugar (3.5 oz).
60 ml milk (2 fl oz).
150 g flour (5.3 oz).
10 g baking powder (0.35 oz).
Baking tray with baking paper.
4 egg whites.
200g sugar.
10 g vanilla sugar.
1 tablespoon lemon juice.
Beat for 7-8 minutes until this consistency is reached.
60 g almonds (2 oz).
Bake for 30 minutes at 170 °C (338 °F).
