Wow Jerry, another major tear down and build up, I hope this rear diff project is completed quickly. It would be good to see you get back on the trails, exploring ghost towns and panning for gold.

How do the pinion bearings get oil with that steep diff angle

You can overfill it to get more oil up there. I put 3.5 quarts in my 8.8 although it isn't as steep. I have almost 10,000 miles on it so far without any issues. Bearings are still good and I don't have excess oil weeping out of the seals.

i've heard of people putting 3.5 quarts and that's what i'll most likely do as well

Too late to do but curious why didn’t do a long arm setup. Tjs seem to ride really nice with them. Especially lifted ones, they almost ride like stock again.
