You want to mix the coffee with the ice cream ideally, not have it make contact with the teeth. Brain freeze is just relocated pain from the roof of the mouth in the end, so heating up the roof of your mouth subsides the brain freeze. In short, just wait until you get brain freeze, then drink the coffee for maximum results. Smart idea indeed!
