Please forgive my ignorance, but what does remastered mean in this context. I love GM and want to appreciate the effort here.

Mastering is basically the last step when producing a track, where the producer will make all indiviual sounds and instruments work/blend together, so none of them is too loud too silent and such. This can make a big difference. In these remasters you might be able to hear a lot more clarity and details because GM are a lot more experienced with mastering nowadays, so they pretty much know how to "tune their instruments" a lot better
