the drop is imho not because it's slow, but because the pt100 gets unloaded, the radiation from the drum, and then you drop in the "cold" beans, and those cool down the sensor. the thinner and more conductiv the outer sensormaterial, the faster would be the reading.

the problem with all infrared-thermometer is that they can only meassure 1 surface correctly (can be adjusted - usually you get a manual with surface adjustment corrections). the question is, if 2 thermometer give you 2 differnent °C readings, one or both are lying!
