Chicken tikka is an Indian dish. The masala variation was invented by an Indian chef working in a restaurant in Glasgow in the 1960s to meet the demands of customers wanting a gravy to go with the dish.

More likely, it derived from butter chicken, a popular dish in northern India. Some observers have called chicken tikka masala the first widely accepted example of fusion cuisine. The dish has taken on large cultural significance in Britain. It is widely considered to be one of the country's national dishes.

I do a mixture of both for the chicken, give it a little fry, lay it out on a tray, in the oven 10mins, turn over, give it another 10 mins then add it to the sauce with the juice out of the tray. That gives a crust to the chicken without drying it out too much.

Nope, the two have very different use and taste that they will give to the dish... You can use yogurt for the marination, but not the gravy for this dish
To make the Tikka (or any Indian style dish) less spicy but still as flavourful, ie kid friendly, you can use a whole green Jalapeno in place of the Serrano, slit on one side, fried up with the onions. BTW you can (should) fry whole spices and leaves(bay) with the onions like the Indians do, it brings out much more flavour. Don't worry, they don't scorch. Then remove and discard the chilli before you add moisture. If you leave it in, it will of course have more burn, but not too bad as Jalapeno is milder than Serrano. That will add that green chilli savour without most of the sting. Here in South Africa we use that special green chilli bitterness without the burn in many dishes that kids also like and this is how. Of course you can halve and seed them, and then remove the chilli but I've found that my way doesn't sting any more than a pinch of black pepper and kids can generally deal with that if the food is yummy enough. We like to make our dishes milder than in India, then offer freshly made sambal (cubed tomato, chopped chilli, scallion, vinegar, salt, sugar and cilantro,basically any salsa works here) and chutney on the side to spice things up for adults.

Yes on roasting the whole spices with the onions. I actually do that in my curry chicken recipe video. It does, however, freak people out but I love it.

And full fat yogurt is better for you anyways , anytime they mess with the fat content of an ingredient in a dish it’s not good for you, just like whole milk is way better for you than skim milk or 2%, the fat is good for you

The chicken comes out best if you only half cook it on the grll, and let it finish cooking in the sauce. It's still not even close to real tandoori chicken, you just can't duplicate that tenderness and texture without a tandoor.

For sure, but my goal is get it as delicious as possible and most folks don’t have a tandoor, so a grill or a smoker is going to be the next best bet.

Chicken Tikka and Chai are British and English is an Indian language😂😂😂😂. By the way, glad you visit and enjoy a restaurant with a Himalayan connection. Try some Himalayan cuisine next time. Whether Shikar Bhaat (mutton n rice) from my native place in India or Nepali Jhaneko Chicken Masu (carrom/bishop seed chicken). If they do Kashmiri, Himanchali, Bihari, Sikkimese cuisine - lot more to explore. Arunachal food could be a n eye opener to how wide the choices can be this side of the globe, and its barely explored by the online world. For the excellent vegetarian food though, you will only find the ingredients here, not even India's 4 big cities carry that flavor.

If you research this recipe, and I mean research it, garam masala can sometimes be in it, sometimes not. With the sauce it’s a teaspoon, and sure that may not seem like a lot, but I’m looking for complimenting flavors with a bit more on the spicy side, which is why Kashmiri is more the hero. If you’d like to add more, please feel free. The written recipe actually on my site does gives you a range going up to 1 1/2 tsp each for the marinade and sauce, but sure I probably should have given the range on video as well. My bad. But after testing it a few times, this is where we landed to get the flavors where I wanted. I promise you I tasted along the entire process and if I felt like it needed more, I would have added it.

Most think it has roots in Northern Indian Cuisine, but there is also some scholarship that believes it was created in Scotland. With the flavors and techniques of the recipe, for me anyways, it certainly has Indian roots.

Long 1-3 hour simmers extracts amazing flavors from ingredients into gravy. even Michelin star restaurants use chicken stocks house made. which is the same concept. You could be right. I'll report back when I make your recipe in about a week.
