✓ At long last, finally tasting the elusive King of Chaat - "Raj Kachori"; very popular in India but rarely found in London.
The only way I can think of describing the Raj Kachori is that it's like an enormous pani puri but with tons more flavour and texture combinations.
The Raj Katchori dish at Patri Artisan restaurant have been specially created and developed for their Christmas Menu by chef Puneet (it will be available for a limited time for the Xmas period only).
In this video we watch as Chef Patron kindly shows us how he makes his restaurant's version of these classic street food dishes.
DELHI STYLE RAJ KACHORI CHAAT RECIPE INGREDIENTS:
* Wheat-flour & Semolina Kachori Puris.
* Bhalla (Lentil Dumpling with chillies & Cumin Seeds)
* Sweet Yoghurt (Mithi Dahi).
* Plain boiled Chickpeas (Chana)
* Spicy Green Mint Chutney
* Tamarind Chutney (Imli)
* Fresh Cream (Makhan)
* Mango Sauce
* Chaat Masala (Spicy Spice Mix)
* Toasted Cumin Powder (Jeeru)
* Fine "Nylon" Sev (Gram-flour Noodles)
* Pomegranate Seeds (Dharam)
* Fresh chopped Coriander leaves(Dhana)
* Mashed Potato (Chat Pata Bateta) seasoned with: Salt, Sugar, Deggi Mirch, Red Chilli Powder, Garam Masala, Roasted Cumin Powder and fresh Lemon Juice.
RAJASTHAN STYLE RAJ KACHORI RECIPE INGREDIENTS:
* Crushed Papri Puris (Wheat flour biscuits)
* Spiced Mashed Potato with some Chickpeas
* Kachumber (Chopped Red Onion, Tomatoes & Cucumber)
* Puffed Rice (Mumra) with Curry Leaf and Chana Dal
* Spiced Cashew Nuts
* Spicy & Crunchy fried Green Peas (Vatana)
* Boondi
* Cumin Powder
* Fresh Lemon Juice
* Chaat Masala
* Spicy Mint Chutney
* Tamarind Chutney (Imli).
* Sweet Yoghurt (Mithi Dahi)
* Pomegranate Seeds
* Coriander leaves
* Fine Sev
* Deggi Mirch
* Hot Green Chilli pieces
* Matchsticks of Fresh Ginger
* Wedge of Lemon (Limbu)

There are many other "Indian Street Eat" items on their menu that we didn't have a chance to try this time.........so we can't wait to pay a return visit to taste what we have missed this time around, wink wink!!! ;-)

Their menu changes regularly concentration on different parts of India wit each menu change (at the moment the menu is inspired by the food of Calcutta)........the authentic tasting Indian recipes are the creation and brainchild of Chef Puneet.
