Nice one LJ good example. I’ve never had a lot of success with the kveik yeast apart from the fast ferment and doing so in the hot shed. But last time I did it ended up tipping the whole batch out every bottle just had a real strange flavour and I couldn’t put my finger on it. Great as always mate hope your well cheers 🍻

Hey LJ, thanks for the vid. Got a question: when you say the beers have been in the keg for x number of weeks, and then in the bottle and in to the fridge...are they in the fridge or just on the floor for those weeks in the keg? Cheers!

The kegs were in the fridge until I transfered to bottles.So cold since end of ferment.

Good informative video again mate. What would you set your temp at for US-05 and a lager? You mentioned it but didn’t say. Since your ferment fridge vid I’ve set myself up with an InkBird, fridge and a heater. Just put my second brew after years of doing without. Did my first at 16c Thanks

I have always said 05 at 15° for a lagerish finish. I am experimenting with going lower, and early results are positive, but it's ongoing at the moment.

Nice one LJ, some more interesting viewing. I didn't quite follow what you were saying about Richard Glover... Did you mean Richard as in Drive presenter on 702 Sydney? Coincidentally I believe Richard is also a home brewer.

Not the same Richard Glover. There is afacebook group, Yeast, buy swap and sell ran by Richard Glover, who I get my very first Kviek strain off years ago when it very first hit Oz...... I got the Oslo off another member but can't remember who.... and can't be arsed searching.

Am I using to many ingredients!!? I just cannot get a lager really. I now have two fermentation fridges and I am using yeast such as M76 & M54 mangrove jacks. I use tins such as Morgan’s and coopers and I’m doing a couple of MJ pouches just now. I think I’m using far too much LME/DME and Dextrose, the beers turn out okay but it has that amber ale colour and that home brew smell, it doesn’t taste crisp like lager. I am using a kg of DME/LME and about 300-500g of dextrose, I keep the FV in the Fridge for about 4 weeks all in all then I batch carbonate with dextrose and bottle. After about 2x3 weeks in the garage it’s alright but nothing special.

M54 is a warm ferment lager yeast, used for making Steam Beer(California Common), it is essentially an ale, M76 is a big bodied and round lager. Try swapping the malt/dex amounts on the next brew, make a 1 litre starter with M76, M84, Llabrew Diamond or W34/70, ferment nice and cool. Check out video 'Brew School 9' for making a starter and also 'Fast fermenting lager'. I suggest Black rock Dry Lager, Morgans Blue Mountain, Black Rock Pilsener Blonde or Coopers Cerveza as a base. Yeast numbers and temp are super important to get a lager right. In all honesty though, it is very difficult to get away from the twang no matter what can you use, as a general rule the lighter styles have less twang. Don't forget to condition for 6 weeks once bottled.
