Fortunately the technique of making this type of noodle - 竹升面 in Mandarin, Jook-sing noodle in English, is still treasured in mainland China and lots of chefs are making them everyday for customers. It's not dying yet and is enjoyed everyday by us Chinese. Kudos to this man and his family for keeping it alive in Hongkong.

There's a Noodle house in the Philippines named "Panciteria" which uses the same technique in noodle making. The Noodle house is located in the heart of Lipa City Batangas.,
