Marco is a master of a dying art-kneading the dough for bamboo noodles with a bamboo pole. If you walk by his family’s Kwan Kee Bamboo Noodle shop in Hong Kong, you might see him at work, bouncing up and down like a seesaw as he pounds the dough. It’s physically tiring, but Marco says the technique makes noodles that are chewier, springier and tastier.

Jump up and down 60 times in your room. It's already straining to jump as our bodies aren't designed for that. We are just good to walk for days. Any other repetitive exercise can fuck you up.

@@berksarioz969 While I have no doubt that this is tough work, he isn't just straight jumping up and down he does have what is essentially a spring that he is sitting on keeping him from taking the full force of his body hitting the floor and it also gives him a boost when he jumps up as well.

Anyone else with Bourdain memories when watching this? Turns out the old man he visited so many years ago in his cramped workshop doing exactly this type of noodle was thankfully not the last of his kind and craft. Good to see another family of craftsman continuing the tradition.

Fortunately the technique of making this type of noodle - 竹升面 in Mandarin, Jook-sing noodle in English, is still treasured in mainland China and lots of chefs are making them everyday for customers. It's not dying yet and is enjoyed everyday by us Chinese. Kudos to this man and his family for keeping it alive in Hongkong.

I still remember there was one person making noodle this way in my town. I used to watch him making the noodles while im eating there, it was magnificent to watch. Sadly he already passed away years ago and the store now making the noodle using machines. Its still the best noodle place to eat Been there even before my age hit 2 digits and im still going to that place till this day.

@@galaxy9310 pretty sure his argument was that this method wouldnt get you the same texture everytime, if this guy lost a bit of feeling in his right cheek then the noodles would be entirely different, same thing would happen if anyone else tried to do this, so it's really unreliable. And its unnecessary because they're a bunch of ways to press the dough in that specific way without the pole jumping, ie a press

@@cameronriddle4520 Honestly, I don't know much on this method myself so I can't say for sure. But I believe that since it's a tradition, they would know stuff on how to keep the noodle texture even. I doubt it's just jumping on noodle and voila. Some things may look simple but... aren't. And it's a small interview, he didn't develop on everything required to become a cook like him.

my Dad used to make noodle this way too, and I was 5 years old when he used to ask me to participate jumping on the seesaw! while we have Dad-Daughter fun time, he can produce his noodle. I miss that moment! but now, he order the noodle from noodle factory, it taste definitely different from when we used to make it ourself ☹️
