They are unique airplanes. It is a real point design i.e. go somewhere fast for the least amount of fuel. But like everything in life there is no free lunch. They are very long to build if you want to do a good job, particularly on the finish. And you need 2500 ft minimum of asphalt. Forget dropping into little grass strips. You can build an RV in way less time, it goes faster, aerobatic and you can easily get in and out of a 1500 ft grass strip. But it burns more gas and the kits and bigger engine are a lot more money. There are no free lunches. Certainly the rutan canards are really cool looking.

See his blog. He is using the open-ez plans. There are lots of details on the blog about the tradeoffs, don't build to the open-ez plans though without taking the time to understand, as there are some major gotchas that could lead to expensive mistakes, or an unsafe aircraft.

How about 3D printed shells you just drape with fiber glass instead of all the fabrication. Maybe fill with PU foam afterwards.
