LOTS of great producers do that. Dr Dre famously used Scott Storch for piano even though he can play himself. I forget his bassist's name, but you'll see him credited on everything dre does. Eminem too. J.Cole. Kanye. Just Blaze. They can chop samples and add drums and play piano and even bass, but a lot of their biggest records were done like conductors rather than a guy with a turntable and an MP.
