The Marrakesh Man's Dish and How to Make It: Tangia!

If you've seen the tajines around Marrakesh, you've likely seen the tangia too. But did you know that this is a traditional dish, cooked by men for men? The stories go that the tangia (or tanjia) is placed in the ashes of the fires that heat the water for the hammam (public bath house) for several hours to slowly cook (while working men bathed, enjoyed a rub down and a nice hot tea with their mates). Many will tell you that the tangia is exclusively a Marrakesh dish and it's certainly more difficult to find elsewhere throughout Morocco. Luckily for you, we can show you how it's made from scratch and how to eat it!
