Hi - you'll need to look for "matoke". African and south Indian shops will stock them. They're different to regular unripe bananas.

Hi. I haven’t tried that but I believe the mixture would be a lot slacker since sweet potatoes have a higher water content. Might be difficult to shape on the skewer.

Hey! I used the small green ones from the South Asian shop. You can get them at most SA or African market stalls too :) The ones in the supermarket are different and less starchy.

Nah dude kebabs has been meat and vegetarian since the ancient times. That’s how koftas came in to Indian cuisine, I don’t know what your nationality is but vegetarian kebabs has co existed since the beginning of the kebabs that’s another thing that they haven’t reached the western countries yet.
