Great collection of recipes! I'm cooking a 7.5 lb pork shoulder, low and slow for some pulled pork barbecue today. It should be ready around dinner time. I prepped a batch of coleslaw yesterday. To convert the recipe to keto I substituted the bread crumbs with pulverized pork rinds and used allulose and Monk fruit for the sweetener in the glaze. And i didn't have 2 pounds of ground beef so i used 1 pound ground beef and 1 pound of ground pork. It's in the oven now. I'll try to come back and add to my comment after tasting. Edit: The meatloaf was good, but a little too salty. I would reduce the salt to half or three quarters of a teaspoon. AMD while it was good it wasn't the best meatloaf I've ever had. But in all fairness I did alter the recipe. The glaze was delicious! I'll use that the next time I make any meatloaf recipe.
