The title of this video is all wrong, the young chef/owner is not struggling he is exceptional in his ability to shop, prepare, cook, with ease. He seems to have a thriving business. The food looks so delicious. The customers look thrilled and satisfied with their meals. I believe he is going to succeed for decades. It is also great that he is still keeping his father's small garden thriving and using the fresh leeks. Love watching this channel. Thank you.

I used to work at a restaurant, he old style he don't make much money but he used the best. He wasting gas but it tasted better useing Chinese burner , and he low cook the pork fir 2 days that costly but he want only the best, his cooking is perfect .

i lived in japan in 1988 ..japanese dont use wok for cooking..i think they now adapted asian type of cooking..

Although I fully agree with HM, I believe the word struggle is misunderstood in translation. Strive. endeavor, commit ... to making the best dish for his customers, would be a better statement. However, it should be noted that once I pass "konnichiwa" and ohayo gozaimasu, I too am lost in translation!!
