The common languages in New Testament Israel were Aramaic and Greek. Aramaic was similar to Hebrew, and some still speak it today. Most only heard Hebrew when it was read in the synagogues. In the early second century, Papias and Irenaeus wrote that Matthew was originally composed in Hebrew. That may be true, but we only have Greek copies. Matthew likely copied from Mark and added his own experiences. This was a common practice at the time and wasn’t considered plagiarism.

@@jimsh8189 Yes, the Pharisees were very much against Hellenism. They were the conservative sect, or “denomination,” of Judaism in Jesus's time. It’s almost certain that Jesus and most of his disciples were Pharisees, except as the Gospels note otherwise. Galilee wasn’t far from the largest group of Essenes. Jesus was likely familiar with them, and many have made a good case for John the Baptist being an Essene. I lean towards that view, though it’s not worth squabbling over. Nothing beyond the basics is worth a division. Being a Pharisee doesn’t mean they didn’t overwhelmingly use Aramaic as their primary language. Most were also conversant in Koine Greek.
